ABSTRACT

Introduction: Butchers are exposed to various types of hazards in the course of their work, which could lead to health problems of varying severity. The aim of this study was to identify the occupational hazards and health problems of butchers in Uyo and also assess the physical conditions of their slaughter facilities. Materials and Methods: A descriptive cross-sectional study was carried out among 157 butchers in Uyo using a semi-structured questionnaire for data collection. Facility assessment was made using a checklist. Analysis was carried out using Statistical Package for Social Sciences version 20. Level of significance was set at 0.05. Results: The mean age of respondents was 33 ± 9.94 years. Most respondents were males (83.4%). The most commonly reported workplace hazards were knife (93.6%), bones (57.3%), and slippery floor (24.8%). The most common health problems were knife cuts (87.3%), cuts from bones (50.3%), and neck pain (36.9%). Having injuries from live animals and back pain were significantly associated with working with cows (P < 0.05). The most common de-furring method was burning with firewood (61.1%). The slaughter facilities lacked many expected amenities of a standard abattoir. Conclusion: Identified hazards and health problems of butchers were numerous. The slaughter facilities lacked appropriate equipment that promotes workers' health and safety. It is recommended that slaughter facilities be upgraded to meet the standard abattoir practice. Regular training of butchers should be organized by their association to encourage safer practice, including the use of appropriate protective wears. Use of the chemical method of de-furring should also be encouraged to limit exposure to harmful gases

ABSTRACT

Abstract:As meat consumption is increasing worldwide to cover for protein demands; also raise concerns and challenges regarding meat hygiene and safety. The current one year follow up study aimed at investigating on sanitary practices and occurrence of zoonotic conditions; during postmortem examination; in cattle at slaughter in Morogoro Municipality abattoir. Sanitary practices were assessed through direct observation where as routine post-mortem inspection procedures were employed to detect zoonotic conditions in cattle at slaughter. During the study period a total of 30;713 cattle were slaughtered and inspected at the abattoir. Results revealed poor hygienic practices at the level of abattoir surrounding; the slaughter operation area; personnel as well as meat vans. Whole carcasses; lungs; livers; hearts and heads were condemned due to zoonotic conditions at rates of 0.026; 1.96; 1.61; 0.02 and 0.21 respectively. Bovine tuberculosis; Cysticercus bovis check for this species in other resources cysts; fasciolosis and hydatidosis were the responsible zoonotic conditions for the condemnations. Bovine tuberculosis was a leading zoonotic cause of condemnations accounting for 95.7 of lungs and 100 of all head and carcass condemnations. Cysticercus bovis cysts were ranking the second in serving as causes of condemnations closely followed by fasciolosis and lastly hydatidosis. Occurrence of disease conditions with zoonotic implication in cattle at slaughter; meant for human consumption; may pose significant economic and public health risks to especially disaster-prone marginalized communities. Thus; there is a need to introduce appropriate control measures of livestock diseases to minimize the rate of infection; and eventually reduce economic losses and safeguard public health

ABSTRACT

Background:Thermophilic Campylobacter spp. namely; Campylobacter jejuni and coli cause acute diarrheal diseases in humans worldwide; although these species are known to occur in the intestinal tract of a wide variety of domestic and wild animals. Objective: Little is known about the presence of these bacteria in various food animals as possible sources of infection to humans in Ethiopia. Therefore this study was undertaken to determine the prevalence of thermophilic Campylobacter species in sheep and goat carcasses at a private export abattoir in Debre-Zeit; Ethiopia. Methods: A cross-sectional study was conducted on apparently healthy sheep and goat slaughtered at a private export abattoir in Debre-Zeit; from October 2007 to March 2008. Sheep carcasses (mutton) (n=218) and goat carcasses (n=180) were analyzed for Campylobacter spp. Swabs were taken from four different sites on the carcasses (crutch; abdomen; thorax and breast) at different stages of slaughtering processes (before evisceration; after evisceration and after washing). Results: Campylobacter spp were isolated from 40 (10.1) out of 398 carcasses examined. There was no statistically significant difference in the rate of isolation of Campylobacter species in different swabbing sites. Of the 40 thermophilic campylobacter isolates; C. jejuni and C. coli accounted for 29 (72.5) and 11 (27.5); respectively. Conclusions: The results of this study revealed the presence of campylobacter in sheep and goat carcasses; indicating possible risks of infection to people through the consumption of raw/under-cooked meat. Coordinated actions are needed to reduce or eliminate the risks posed by this organism at various stages of slaughtering process
